Lamb Shanks with Rosemary & Fennel

Lamb shanks are the ultimate comfort food, offering really tender meat that falls off the bone. Lamb goes really well with rosemary and fennel, and the balsamic vinegar cooks down into a really velvety sauce.

PREP TIME: 30 min
COOK TIME: 3 hours


  • 3 lamb shanks
  • 1 tbsp Life of Spice Fifty Shades of Grey
  • 1 tbsp plain flour
  • 1 tbsp olive oil
  • 1 red onion, diced
  • 1 clove garlic, crushed
  • 35ml balsamic vinegar
  • 1 400g tin chopped tomatoes
  • 400ml chicken stock
  • 2/3 carrots, sliced
  • 1 red pepper, cut into large chunks
  • 1 green pepper, cut into large chunks
  • 1/4 teaspoon Worcestershire sauce


  1. Pre-heat the oven to 160°C
  2. Mix the flour and the Life of Spice Fifty Shades of Grey together
  3. Dredge the lamb shanks through the seasoned flour
  4. Heat the olive oil over a medium high heat, then brown the lamb shanks in an enameled cast iron casserole dish
  5. Remove the lamb shanks to a plate and add the onion and sweat for 5 minutes, before adding the garlic and carrots and cooking for a further 2/3 minutes
  6. Add the balsamic vinegar, the tomatoes, chicken stock and Worcestershire sauce and bring to a simmer
  7. Add back in the lamb shanks and place in the oven
  8. After 2.5 hours add in the red and green pepper, season to your taste, and return to the oven for another half hour
  9. Serve on mashed potato
