Greek Salad
A good Greek Salad is an essential summer staple in our house. The secret's all down to salting the ingredients before preparing the salad. Enjoy!
Ingredients
- 6 medium or 4 large ripe tomatoes (a mixture adds variety)
- 1/2 cucumber
- 1 small red onion
- 100g Feta cheese
- 1 tbsp Flaked sea salt
- 60ml Red wine vinegar
- 1 pinch Italian Herbs
- 1 tbsp Olive oil
Directions
- Peel and slice the red onion and place in a bowl with the red wine vinegar
- Chop the tomatoes into bite size chunks
- Peel the cucumber lengthways to give a striped effect and then chop into bite size chunks and place in a bowl with the tomatoes
- Sprinkle the sea salt over the tomatoes and cucumber (this will bring out some of the moisture and make the basis of the dressing
- After one hour, and immediately before serving, mix the drained red onion with the tomatoes and cucumber
- Add the feta cheese on top
- Sprinkle over the Italian Herbs and drizzle with olive oil
