Greek Salad

Greek Salad

A good Greek Salad is an essential summer staple in our house. The secret's all down to salting the ingredients before preparing the salad. Enjoy!

SERVES: 2

Ingredients

  • 6 medium or 4 large ripe tomatoes (a mixture adds variety)
  • 1/2 cucumber
  • 1 small red onion
  • 100g Feta cheese
  • 1 tbsp Flaked sea salt
  • 60ml Red wine vinegar
  • 1 pinch Italian Herbs
  • 1 tbsp Olive oil

Directions

  1. Peel and slice the red onion and place in a bowl with the red wine vinegar
  2. Chop the tomatoes into bite size chunks
  3. Peel the cucumber lengthways to give a striped effect and then chop into bite size chunks and place in a bowl with the tomatoes
  4. Sprinkle the sea salt over the tomatoes and cucumber (this will bring out some of the moisture and make the basis of the dressing
  5. After one hour, and immediately before serving, mix the drained red onion with the tomatoes and cucumber
  6. Add the feta cheese on top
  7. Sprinkle over the Italian Herbs and drizzle with olive oil
Optionally, add some greek black olives before serving
