Provencal Tomatoes

At a loss for a quick lunch snack? I was! From the fridge to the table in 20 minutes (although you may need another 10 minutes to heat the oven).

PREP TIME: 5 min


  • 4 medium/large ripe tomatoes
  • 30g breadcrumbs
  • 30g parmesan cheese (finely grated)
  • 25g finely chopped red onion
  • 1 tsp Life of Spice Herbes de Provence


  1. Pre-heat the oven to 200℃ (390℉)
  2. Cut the tomatoes in half through the stems and scoop out the flesh and seeds
  3. Season the insides generously with salt and pepper
  4. Mix together the breadcrumbs, parmesan cheese, red onion and Life of Spice Herbes de Provence and season with salt and pepper
  5. Place the tomatoes on a baking sheet
  6. Fill the tomatoes with the breadcrumb mixture
  7. Drizzle the tomatoes with olive oil and bake in the oven for 10-15 minutes until crispy and golden
  8. Serve with a fresh baguette
