Chicken & Chorizo One Pot

Chicken Satay

This cheap and simple chicken & chorizo one pot pilaf will more than satisfy – both in terms of taste and budget.

PREP TIME: 10 min
COOK TIME: 1 hour 


  • 4 chicken leg joints
  • 1tbsp olive oil
  • 1tbsp butter
  • 1 onion, chopped
  • 200g chorizo, cut into 5mm discs
  • 1tsp Life of Spice Herbes de la Garrigue
  • 1 red pepper, diced into 2cm cubes
  • 2 garlic cloves, crushed
  • 1tbsp tomato puree
  • 850ml chicken stock
  • 150ml white wine
  • 400g basmati rice
  • parsley to garnish


  1. Portion the chicken legs into drumstick and thigh with a heavy knife
  2. Heat the olive oil and butter in a large pan over a medium high heat
  3. Fry the chicken portions for 5-6 minutes to get a nice colour on the skin, and then remove to a plate
  4. Add the onion, red pepper and a pinch of salt to the pan and cook over a medium heat for 8-10 minutes
  5. Then add the chorizo and crushed garlic to the pan and cook for a further 2 minutes
  6. When the chorizo has started to release it's oils, add the tomato puree and stir to combine with the contents of the pan
  7. Add back the chicken portions, the wine, the stock and the Life of Spice Herbes de la Garrigue (tied in a muslin sack if you wish) and bring the pan up to boil. Cover the pot and let it simmer for 30 minutes
  8. Add the rice to the pot and stir. Cover and let simmer for 10 minutes
  9. Remove the pan from the heat and let it sit off the heat for a further 10 minutes to completely soak up any liquids
  10. Garnish with chopped parsley and serve
